Cook Em Up Crepes

Moist and spongy Cook em up crepes are yummy and so much fun to eat with all different types of fillings. Diary free, egg free and nut free, this is the allergy friendly crepe recipe kids will love to whip up! At our house they’ve become much more than a fun meal, they’re a family event!

Cook Em Up Crepes

Always a crowd pleaser, enjoy these crepes wrapped around delicious fillings on your own design. Light, fluffy and yummy, a excellent way to start the day!

Ingredients

  • 1 cup all purpose flour
  • 2 tablespoon apple sauce
  • 2 cups coconut milk, (chilled)
  • 1 pinch salt
  • 1/4 cup olive oil
  • 1/8 teaspoon ground cinnamon, (optional)

Method

  • 1)

    To a mixing bowl, add flour, applesauce, coconut milk, salt, 1 tablespoon of the oil and cinnamon.

  • 2)

    Whisk in mixing bowl until the batter is pourable but not watery. If too thin, add a bit more flour. If too thick, thin with more coconut milk.

  • 3)

    Heat a pan over medium heat. Once hot, add a little of the remaining oil and spread into an even layer.

  • 4)

    Add one quarter of cup batter. Let cook until the top appears bubbly and the edges are dry then carefully flip and cook for 2-3 minutes more on the other side. Turn heat down if cooking too quickly.

  • 5)

    Repeat until all the batter is used. Keep warm on a plate under a towel. You can use parchment paper in between crepes if you find they’re sticking to each other.

Notes

Sweet fillings: These crepes are delicious with a little vegan butter, wow butter, maple syrup, compote, coconut whipped cream, Cinnamon Baked Apples, fresh fruit (berries or bananas), or granola.

Savory filling ideas: These crepes are also great as a savory snack wrapped around your favourite fillings like; pan fried onions, mushrooms, bell peppers, ham, hummus, or even your fave dairy free cheese alternative like Daiya.
