Really awesome savory, dairy and egg free breakfast options are hard to come by, but we’re happy to say these corn fritters are the exception! These crispy, crunchy and creamy fritters surprise you with bursts of sweet corn and soft onion. They’re a great way to start your day, an excellent snack on the go or in a lunch kit.

Egg and Dairy free Corn Fritters

  • Prep time: 10 minutes
  • Cook time: 25 minutes
  • Total time: 35 minutes
  • Serves: 24 corn fritters

Ingredients

  • 1 can creamed corn, (400 mls)
  • 3/4 cup flour, (regular flour or gluten free flour blend)
  • 1 teaspoon baking powder
  • 3/4 cup allergy-free milk, (Coconut, oat, rice or soy milk)
  • 1/4 cup diced red onion
  • pinch salt and pepper
  • salsa, guacamole, sweet thai chili sauce, (optional)
  • olive oil, (for pan)

Method

  • 1)

    Finely chop up red onion and add to a small bowl along with add creamed corn, allergy-free milk, salt and pepper and mix together.

  • 2)

    Add to the corn mix the flour and baking powder and mix to fully combined, let sit for 5 minutes to thicken.

  • 3)

    Heat up a large frying pan to medium heat and add enough olive oil to coat the pan then ladle in the batter, you should be able to fit five fritters at a time.

  • 4)

    Repeat until all the batter is used and serve with salsa and guacamole and some sweet thai chilli sauce on the side if you like a little sweet and spicy kick.

notes

These fritters are great on their own but can also be served with sweet thai chilli sauce, guacamole, tomato salsa, ketchup or all of the above. They can also be refrigerated and eaten as a snack on the go or in a lunch bag.
