This is the recipe for toasted and sweet granola flakes with just the right amount of crunch. Great in a bowl with some soy or coconut milk for breakfast, sprinkled over fruit for desert, or an excellent crepe filler, this granola tastes good on almost everything!

- 2 1/2 cups gluten free rolled oats
- 2/3 cup unsweetened coconut flakes, ( big one are the best)
- 1/4 teaspoon sea salt
- 3 tablespoon coconut oil
- 1/3 cup maple syrup
- 1 teaspoon pure vanilla extract
Method
- 1)
Preheat oven to three hundred fifty degrees Fahrenheit.

Add oats, coconut and salt to a large mixing bowl and stir to combine.

To a small saucepan, add coconut oil and maple syrup. Warm over medium heat for two to five minutes, stirring frequently until the two are totally combined and there is no visible separation. Add vanilla and stir once more.

Immediately pour over the dry ingredients and stir to combine until all oats and coconut is thoroughly coated. Arrange on a large baking sheet and spread into an even layer.

Bake for ten minutes, then remove from oven and turn the pan around so the other end goes into the oven first (so it bakes evenly). Bake ten minutes more, watching carefully as to not let it burn. You’ll know it’s done when the granola is golden brown and very fragrant.

Let cool completely before enjoying.

You can store in a sealed bag or container at room temperature for two weeks or in the freezer for up to one month.
