Smile Cafe Belgian Waffle recipe for kids with food allergies

These delish waffles are light as a cloud and simple to make. Whipping aquafaba is the secret ingredient to bring a fluffy structure to the tasty batter. Adding a hint of vanilla and cinnamon makes for a flavor high-five you won’t soon forget. Dairy free, egg free, peanut free, tree nut free, sesame free.

If you’ve never heard of aquafaba, get ready to be amazed. All you need to prepare it is a can of chickpeas and a whisk (electric will be much faster). Open the can of chickpeas pour out the liquid (picture 1) and whisk it until its stiff enough to hold it’s shape (picture 2), and you’ve got yourself a fantastic whipped egg white replacement!

Delicious Dairy and Egg free Belgium Waffles

Ingredients

  • 1 cup flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1 cup Allergy friendly milk (oat, coconut, rice, soy)
  • 2 teaspoons olive oil
  • 3 tablespoons aquafaba, unwhipped
  • 1/2 teaspoon vanilla essence

Method

  • 1)

    In a medium sized bowl combine flour, baking powder and ground cinnamon.

  • 2)

    Add the soy milk, vanilla and oil and beat until combined

  • 3)

    In a separate small bowl whip the aquafaba until stiff peaks form.

  • 4)

    Fold the whipped aquafaba into batter.

  • 5)

    Ladle batter into waffle iron.

  • 6)

    Serve with maple syrup, coconut whip, fresh fruit. (optional)

Notes

We like to serve our waffles with maple syrup and coconut whip. They’re also great piled high with fruit and breakfast sausages for a super-dooper brunch!
