Our dairy and egg free french toast is the ultimate breakfast treat! A simple combination of fresh bread with a creamy coconut milk mixture results in a decadent allergy friendly french toast. It’s moist and light–and so very moorish!  They make for perfect breakfast baking with kids as they’re easy to prepare and cook. Delivering mega flavour on their own or even better piled high with fresh fruit and maple syrup.

Egg- and milk-free french toast

  • Prep time: 10 minutes
  • Cook time: 20 minutes
  • Total time: 30 minutes
  • Serves: 4 People

Ingredients

  • 1 loaf bread, (Use a gluten free loaf if GF!)
  • 1 can coconut milk
  • 1 tablespoon corn starch
  • 1 teaspoon vanilla essence
  • 1/2 teaspoon cinnamon

Method

  • 1)

    Cut up the loaf of french bread into pieces about 3 quarters of an inch wide and set aside.

  • 2)

    Combine the cinnamon, cornflour and coconut milk and vanilla into a wide bowl and mix.

  • 3)

    Preheat the stove to medium heat and let warm up, oil the pan.

  • 4)

    Dip the bread into the the cinnamon mix and make sure all surfaces of the bread are covered. Try not to let the bread sit in the liquid too long, it’s best if the bread doesn’t soak the liquid all the way through.

  • 5)

    Place each slice into the pan with a little space in between each and cook slowly utill nicely browned on both sides. Note, the liquid won’t set like egg-based french toast, so if the inside of the toast is still a little gooey it’s absolutely fine.

    Repeat in batches and let cool before eating. Enjoy!

Notes

Feel free to sub out the french bread for a gluten free alternative! The french toast is best served with fruit and maple syrup.
