Coconut Bars - Smile Cafe - Allergy friendly kids recipes

We find the decadence of chocolate bars are something of a enigma to our free-from community. With diary filled chocolate and nuts-a-plenty we had all but written chocolate bars out of our food options, that is until we started experimenting with making our own coconut bars (similar to Bounty bars). There’s a few recipe variations out there for Vegan nut-free bars, but we think this is by far our fave! They’re not too sweet, not too crumbly and most importantly not too tricky for kids to make! We can’t get enough, hope you love them too!

Coconut Bars

  • Prep time: 30 minutes
  • Cook time: 10 minutes
  • Total time: 40 minutes
  • Serves: 24 Mini-Bars

Ingredients

  • 2 cups Unsweetened Coconut flakes
  • 2 tablespoons Virgin Coconut Oil
  • 1/2 cup Sweetened Condensed Coconut Milk
  • 1/4 teaspoon salt
  • 1/2 cup Dark Chocolate Chips

Method

  • 1)

    Combine the salt, coconut flakes, oil and condensed milk into a blender and mix until fully combined and smooth.

  • 2)

    Flatten out mixture onto silicone or parchment paper about a half inch thick rectangle and place in fridge to set firm, should take about 5 minutes.

  • 3)

    Heat about an inch or two of water in a pot on the stove and place a clean and dry bowl on top of the pot with the chocolate chips in it. The bottom of the bowl shouldn’t touch the water but rather heat the chocolate slowly without getting it wet. Turn the element on low and stir occasionally until the chocolate is fully melted.

    Remove coconut mixture from fridge and slice into bars (1 x 3 inches) or squares, whatever shape you prefer.

    drizzle the chocolate over the bars, and once you’re done with that dip the bottom of the bars in the chocolate to round out these decadent bars. Place back into the fridge to set the chocolate hard.

  • 6)

    Keep in the refrigerator and enjoy these creamy cool bites when the craving strikes!

Notes

Sweetened condensed coconut milk can be tricky to find, we were able to track some down at our local health food store and our go-to for allergy friendly cooking chocolate is Enjoy Life!
