Chorizo Hash for the win!

A super yummy allergy friendly comfort meal in our house? it’s got to be Chorizo Hash for the win! Salty, spicy chorizo paired with sweet and creamy onions and potato makes for a excellent brunch, lunch or dinner. Kids love this dish in all it’s crispy potato goodness, and with only six ingredients it’s an easy one to put together. Free from gluten, dairy, egg, peanuts, tree nuts, soy and sesame.

Chorizo Hash

  • Prep time: 10 minutes
  • Cook time: 25 minutes
  • Total time: 35 minutes
  • Serves: 4

Ingredients

  • 4 medium sized potatoes
  • 1 teaspoon salt
  • 1 large yellow onion
  • 3-4 chorizo sausages
  • 1 teaspoon cumin seeds
  • 2 1/2 tablespoons vegetable oil

Method

  • 1)

    Chop and boil five potatoes in salted water till just past done, drain the leaving a small amount of water in the pot.

  • 2)

    Chop up one large onion and put it into large frying pan on medium with the vegetable oil.

  • 3)

    Squeeze out three chorizo sausages from their casing(make sausages like mini meatballs). put them into the pan with the onions. sprinkle some cumin seeds into the pan and continue to cook/stir until the onions are caramelized and the chorizo cooked through.

  • 4)

    Pour the potatos and the small amount of remaining pot water into the pan with the onions and chorizo. break up the potatoes a bit and add a little more vegetable oil and turn the mixture to get a little crisp on the bottom.

Notes

This hash is awesome with guacamole and tomato salsa a squeeze of lime juice and hot sauce. It’s great to serve as is, or wrapped in a lettuce leaf or tortilla!
