These fruity and chocolaty sweet muffins are a delight to make. They’re a great option for breakfast or as a filling snack in a school lunch. Funny Yummy Banana Chocolate Muffins keep well on the counter for a couple of days and also can be baked ahead and frozen. Kids just absolutely love to bake, and then devour these funny yummy muffins!

Funny Yummy Banana Chocolate Muffins

Ingredients

  • 1/4 cup vegan margarine
  • 3/4 cup white sugar
  • 3 ripe mashed bananas, (equal to a heaped cup)
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup allergy free milk, (oat, coconut, rice or soy milk)
  • 1/4 cup Dairy-free chocolate chips

Method

  • 1)

    Preheat the oven to 350 fahrenheit then prepare the muffin trays by greasing with the margarine.

    In a large mixing bowl stir together the margarine and sugar.

  • 3)

    Peel and drop the ripe bananas into the bowl and mash with a fork until completely mixed in with the sugar and margarine and there are no lumps.

    Add the flour, baking powder, baking soda, salt and 1/2 cup of allergy-free milk to the same bowl and mix until just combined.

    If the mix is still too dry add up to a cup of additional allergy-free milk to get a nice wet consistency. This can happen if your banana’s are small or if your banana’s aren’t super-duper ripe!

    Fold in the dairy-free chocolate chips. Evenly scoop the mixture into the greased muffin tray and sprinkle the tops with extra chocolate-chips if you like.

    Then cook in the oven for 25 minutes. The Muffins will be golden brown and delicious!
