Chocolate Chip Cookies

Ingredients

  • 3/4 cup vegan margarine
  • 1/2 cup light brown sugar
  • 1/2 cup organic granulated sugar
  • 3 tablespoons apple sauce, (unsweetened)
  • 2 tablespoons allergy-free milk, (oat, coconut, rice)
  • 3/4 teaspoon vanilla extract
  • 2 1/4 cups all purpose flour
  • 3/4 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon sea salt
  • 1/2 cup chocolate chips

Method

  • 1)

    In a medium bowl whisk together margarine, brown sugar, granulated sugar, apple sauce, soy milk and vanilla until light and fluffy.

  • 2)

    Add flour, baking powder, baking soda, cinnamon and sea salt in the bowl. Mix at a low speed if using an electric mixer.

  • 3)

    Preheat oven to three hundred fifty degrees fahrenheit.

  • 4)

    Pour the chocolate into the bowl and then turn with spoon until well combined.

  • 5)

    Prepare a tray with parchment paper and then put golf sized balls on it with the batter and push down balls slightly. You can use ice cream scoop, spoon, or roll the balls in your hands. Pop the tray into the freezer for ten minutes.

  • 6)

    Bake for twelve minutes then remove from oven and let sit on baking sheet for one minute before transferring cookies to cooling rack. They’ll be gooey still, but will harden as they cool.
