Awesome Apple Turnovers

Who doesn’t love apple turnovers?! These are the spicy, sweet and juicy turnovers we all dream about but free-from those pesky dairy, eggs and nuts… Easy to work dairy-free pastry with sweet apple glaze and cinnamon spiced apple filling makes these turnovers delicious and a ton of fun to put together with the littles. Go on, give ’em a go!

Awesome Apple turnover

  • Prep time: 40 minutes
  • Cook time: 30 minutes
  • Total time: 1 hour 10 minutes
  • Serves: 16 turnovers

Ingredients

Filling

  • 5 apples
  • 1 1/2 tablespoons cinnamon
  • 1/2 cup sugar

Pastry

  • 3 cups flour
  • 1/3 cup vegan margarine
  • 1/3 cup vegetable shortening
  • 1/2 cup sugar
  • 3/4 cup water

Method

Apple Filling

  • 1)

    Peel and slice apples.

  • 2)

    Add sugar and cinnamon into a large bowl. Mix in apples until well combined.

  • 3)

    Set aside.

Pastry

  • 1)

    Add the flour, margarine and shortening into a separate bowl. mash together with a fork until it resembles fine breadcrumbs.

  • 2)

    Stir in sugar.

  • 3)

    Add  water and mix till well combined and holds together.

  • 4)

    Form dough into ball, cover with a damp cloth and chill for thirty minutes in refrigerator.

Assembling the turnover

  • 1)

    Preheat oven to 375F.

  • 2)

    Roll out dough to roughly five millimeters thick or one eighth of an inch.

  • 3)

    Cut the pastry into 10cm squares and place the apples on the pastry.

  • 4)

    For triangle turnovers fold the opposite corners together and seal around the open edges by pressing with the end of a fork.

    For open style turnovers fold the opposite corners together to meet in the center, wrapping the apples down the centre.

    See the picture at the top to see how they should look when assembled.

  • 5)

    Use the juice from the bottom of the apple bowl to baste the assembled turnovers.

  • 6)

    Put prepared turnovers onto parchment paper covered baking trays, bake for around 3o minutes until the apples are soft and pastry is golden brown.

Notes

If you like them extra sweet, you can baste the turnovers with the apple juice each ten minutes when baking.

You can also make a large tart out of these ingredients by cutting the pastry in a large rectangle and placing the apples slices in rows on top, folding over the edges, and basting before baking just as you would the turnovers.
