Nut Free Golden Granola Bars

This golden brown cookie-meets-granola bar is a wonderful addition to any lunch bag. When allergy friendly snack bars are hard to come by these nut free granola bars are a yummy way to go. Our Oaty bars are free from tree nuts, peanuts, dairy, egg and sesame. An absolute cinch to make with the kiddos, they’re always a welcome snack on the go!

Golden Granola Bars

Ingredients

  • 2 cup Oats
  • 1 cup Flour
  • 1 cup Shredded Unsweetened Coconut
  • 1 cup Brown Sugar
  • 1/2 cup Vegan Margarine
  • 6 tablespoons Golden Syrup
  • 2 teaspoons Baking Soda
  • 2 tablespoon Boiling water
  • 1/4 cup Craisins, (either dried cranberries, raisins or sultanas are great)

Method

  • 1)

    Preheat the oven to 320F.

  • 2)

    Combine the oats, flour, coconut, and sugar into a medium bowl and mix well.

  • 3)

    In a small saucepan add the margarine and golden syrup and heat and stir on medium until the margarine is melted, set to the side and allow to cool slightly.

  • 4)

    Combine the baking soda and boiling water in a small cup and watch it bubble up. Add this along with the golden syrup mixture and craisins to the dry ingredients bowl and stir until all three are combined.

  • 5)

    Scoop the dough into parchment paper lined baking tray and spread evenly. Pop into the oven for 13-15 minutes until golden brown.

  • 6)

    Take out the tray and allow to cool before cutting into bars, this gives them time to firm up and means they’ll be nice clean cut bars. Enjoy!

Notes

These bars are based off the Kiwi and Aussie beloved Anzac cookies which were originally made egg-free to ensure they didn’t spoil over long journeys during war time.

To take these bars next level-you could add sunflower, pumpkin seeds or raisins when mixing, you could even do a dairy-free chocolate drizzle over the top of these bars.
