Tasty allergy free hotcakes

Serves: 20 small hotcakes

Hotcakes, mini pancakes, pikelets, no matter what you call these little gems they taste amazing! Free from egg, dairy, peanuts, tree nuts, soy, sesame and seafood they’re top 7 Canada priority allergen free.

These little hotcakes are sweet, fluffy and so much fun for kids to make. Kids will whisk them up easily and just adore flipping them in the pan. With only five ingredients chances are you probably already have these ingredients ready to go.

Tasty allergy free hotcakes: Dairy free, Egg free, peanut free, tree nut free, soy free, sesame free, seafood free.
These can be made gluten free, with a pre-mixed gluten free flour blend. Just be aware you might need to add a little more allergy-free milk to get a nice smooth consistency.

Ingredients

  • 1 cup flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon oil, for the batter
  • 1 cup 1 tablespoon allergy friendly milk, (oat, coconut, soy)
  • 1/4 cup oil, for greasing the pan

Method

  • 1)

    Preheat a pan to medium heat.

  • 2)

    In a bowl stir together flour, sugar, salt and baking powder.

  • 3)

    Add the allergy friendly milk and oil to the flour mixture, whisk until fully combined and smooth.

  • 4)

    Pour a tablespoon of oil to the heated pan then scoop a heaped tablespoon of the batter into the pan for each hotcake. You should be able to fit five to six in the pan at once.

  • 5)

    Leave the hotcakes in the pan untouched until they start to form bubbles that pop on the surface, that’s when they’re ready to flip. Flip them over then allow to brown evenly on both sides before removing to a plate.

  • 6)

    Repeat the steps four and five until all the batter is used up.

  • 7)

    Top off you hotcakes with jam, fresh fruit or maple syrup and if you want to go all out, a dollop of coco whip!
