Choco-riffic Allergy Friendly Cookie Recipe

Our Choco-riffic Cookies are the perfect mix of rich chocolate with a hint of salt (from the margarine). They’re perfectly crumbly and have yummy pops of cornflakes to hold it all together! There’s a bit of mixing involved, but with only six top 7 allergen free ingredients they’re a breeze to make with the kiddos and also don’t take long to prepare and bake.

These cookies go down a treat whether serving to allergic or non-allergic friends and family. Great as a lunchbox treat, afternoon tea, dessert or even at a bake sale! Allergy Free Choco-riffic Cookies do not disappoint.

Choco-riffic Cookies

  • Prep time: 20 minutes
  • Cook time: 15 minutes
  • Total time: 35 minutes
  • Serves: 20 cookies

Ingredients

  • 1 cup allergy free margarine
  • 1/2 cup sugar
  • 1 1/4 cups flour
  • 2/3 cup cocoa powder
  • 2 1/2 cups cornflakes
  • 1/2 cup allergy free baking chocolate, (optional)

Method

  • 1)

    Preheat the oven to 350.

  • 2)

    Cream together the allergy free margarine and sugar till well combined.

  • 3)

    Add flour and cocoa to margarine, and mix again until all combined.

  • 4)

    Fold in the cornflakes until, you guessed it, combined again.

  • 5)

    Spoon golf ball sized cookie dough onto silicone or parchment paper, and flatten out slightly, 12 should fit per baking sheet.

  • 6)

    Bake cookies for around 15 minutes and allow to cool. Yum!

  • 7)

    To take these cookies next level, melt some allergen free baking chocolate in a pot on low heat, and dip the tops of the cookies into the chocolate. Allow to set in the fridge. Double Yum!

Notes

This recipe is based on a popular New Zealand Afghan cookie, but modified to remove dairy and tree nuts!
