Smile Cafe allergy free apple fritter recipeThis recipe is like a trip to the carnival but in your own home! With deliciously soft apple wrapped in impossibly light batter these fritters are so yummy and very moreish. The batter is so light thanks to the aquafaba, and not greasy at all thanks to the right oil temperature.

These rings of apple delight are topped off with a dusting of cinnamon sugar to take the decadence next level. Because cinnamon and apple are, after all, such a winning flavor combo.

Enjoy for breakfast, afternoon tea or desert, they’re great on their own or with a scoop of allergy free ice-cream.

As always this recipe is allergy friendly made, diary free, egg free, soy free, peanut free, tree nut free, sesame free, seafood free. The recipe can also be made gluten free with a dash of extra allergy free milk to balance out the batter wetness.

Allergy Free Apple Fritters

Ingredients

  • 1 cup flour
  • 1/4 teaspoon salt
  • 1 cup 2 tablespoons allergy free milk
  • 3 tablespoons aquafaba
  • 2 large green apples, we use granny smith
  • 3 cups oil, for frying, can be reused
  • 3 tablespoons sugar
  • 1/2 teaspoon cinnamon, can add extra

Method

  • 1)

    Peel the apples

    Slice the apples horizontally into eight circles, cut out the cores to make rings and set aside.

  • 3)

    In a medium bowl combine the flour and salt. Then stir in the allergy free milk until fully combined to begin the batter.

  • 4)

    In a separate small bowl whisk the aquafaba until it fluffs up to form a thick foam, no liquid should remain.

  • 5)

    Scoop foamed aquafaba into batter bowl, fold in to combine without loosing those lovely foamy bubbles.

  • 6)

    Pour the vegetable oil in a pan and heat to 350 degrees Fahrenheit.

  • 7)

    In a small cup combine the sugar and cinnamon, set aside for later.

  • 8)

    Dip the prepared apples into the batter one at a time, Make sure the center hole is not filled with batter. Then place into the hot oil carefully letting it fall away from you.

  • 9)

    Allow to cook for three minutes (or until golden brown) on each side. Remove from oil with slotted spoon and place on a wire drying rack to cool.

  • 10)

    Sprinkle the still apple fritters on the drying rack with the pre-prepared cinnamon sugar mix while still hot, it’ll stick to the fritters best this way.

    Repeat steps 8-10 until all your apple rings are fritters, allow them all to cool until warm, then get stuck in!

Notes

Once the oil is fully cooled you can store in a jar for next time, the oil can be reused for any sweet recipes fry oil.
